Inventory Location Update Issue

We use Location to determine what art is at each location. Either Gallery or Studio or other places.
With this recent update, even when an item is sold, it is still listed as in Gallery for the location. Which, it obviously is no longer if it is sold... Is there a work around for this or can you please put ours back how it used to be? This is not a helpful update and makes tracking inventory location pretty much useless in this system now.
How else should we track inventory location in this new format?

Hi Saron! After feedback on our recent Location field update, we’ve added an opt-in setting for automatic location changes.
Navigate to Account Settings >> Configuration >> Inventory and turn on the “Sale Status in Location” toggle. The toggle is off by default. When turned on, a confirmation listing current and proposed locations appears after each sale, consignment, or return. Uncheck any items you'd like to keep at their current location.
This setting gives you the flexibility to keep locations as-is or let them update automatically, depending on your workflow.
